The patient art of sourdough, shaped by time & fire.
At Het Lustige Bakkertje, we believe great bread cannot be hurried. In our Ghent bakery, every loaf starts with natural wild yeasts and freshly milled regional flour, going through an unhurried 48-hour cold fermentation cycle that unlocks complex aromas and gentle digestible textures.
No chemical improvers, artificial preservatives, or speed-baking shortcuts. From our crackling desembrood boules to rich, flaky viennoiserie layered with pure farm butter, every batch is shaped by hand and baked fresh in our stone deck ovens each morning.

Crisp Stone Hearth Bake
Baked daily at dawn for rich blistered crusts and tender crumb.

"Real bread is simply four pure elements: flour, water, sea salt, and patience. We let nature do the work."
Meet the Hands Behind Our Daily Bread
Long before the cobblestones of Ghent awake, our guild gathers around dusted wooden benches. Guided by natural yeasts, tactile heritage techniques, and pure regional grain, we craft each crust with honest devotion.
